In Hungary we say disznóvágás. Like everybody harvest pigs in smaller towns it's kind of a party for Hungarians :D we get drunk as shit then harvest them
Good job E. Butching your own animals is hard work. You'll get faster in a few years. I started butchering my own deer 4 years ago and it would take me almost all day to do 1 deer. Now I can do.it in a couple hours. Also, try freezer wrap and butcher paper. I use to use vacuum bags but I alway lost meat because the bags wouldn't seal. Plus wrap and paper is much cheaper. Armand's accent... you said he was Icelandic? Good neighbours are gold here in Norway. If you're trying to do this all yourself, maybe you need to harvest one pig at a time and keep the others on the hoof until you get the hang of it. When I lived in Wisconsin, my cousins had livestock and there were facilities you could send your animals to and just have everything returned, cut up, packed and labeled. The only places I've come across here in Norway like that are in Rorøs.
Those Victorinox are the same knives we used in the meat department of the store I used to work at, they’re pretty good butcher knives. My man you’re going to be eating good now! I bought a shoulder and my dad smoked it for me and it was great.

I love your videos. We’re hoping to get pigs in the next year or two, Im not quite ambitious enough to try and butcher them myself but this gives me some confidence. Maybe in a few years.

Yep, it takes a bit of work to butcher an animal. I haven't butchered a hog/pig yet but butchered quite a few deer and learned more after each butchering session. Sharp knives are a big part. I had to sharpen my knives throughout the butchering process. It seems fat and skin dull a blade faster than anticipated. Enjoyed your video. Have a Merry Christmas. 👍🏽🙂
Great video! I agree with the other person that mentioned it would be cool to see the traditional dishes you make with that meat. I also agree that getting a couple more pigs next year would be a good idea
