@@alex9949 This recipe is a Breakfast take on the "Cottage Cheese Flatbread" that is trending. We have cooked it and agreed that it has a "Bread-Like" taste. So, we made a breakfast version of it. There are "crustless quiche" recipes but I associate them more as a Casserole. This could be associated with an omelette, but it is not folded and it is cooked differently. If anything, this woulb be better associated as a Frittata the ingredients as just different. However, this recipe is based off of the Cottage Cheese Flatbread recipe beauce of the base ingredients.
That made me instantly hungry! Too bad I can't eat for another 4 hours (intermittent fasting). I'm not too sure that I'd plus that up too much, except maybe some sliced jalapenos and/or green onions. And of course Louisiana Hot Sauce on the side.. Hmmm, maybe even some chorizo instead of the breakfast sausage
