The reason why Giyus Haori is similar to the guy that tanjiro trained with(forgot his name) is because him and giyu were friends and giyu was really sad when he died.

The reason Giyu has a pattern the same is because the hand demon/the big green demon killed sabito and sabito was friends with Giyu so in honor Giyu made a replacement in his horari

The red half of giyu's haori is from his sister who saved giyu or something the the other half is from sabito who saved giyu during final selection
