IIRC, Jedi supposedly required a tonne of training in specialized styles before they ever picked up a lightsaber because of how ridiculously easy it is to screw up and cut off your limbs. With that in mind, I can definitely see why a jedi who comes up against your girlfriend would be confused and horrified.
