They do actually reassemble some aircraft after a crash to determine points of impact or the source of a suspected explosion. TWA 800 and MH 117 were both reassembled after ones fuel tank exploded and the other was shot down.

F for the guy also yes they do re-create the plane with the pieces to look for missing parts (example: missing engine, wing flaps, etc.) and that game really seems like its very well done and seems to following reality pretty good

They reconstruct the plane because once they have a stock of what is missing and they recheck the crash site, they can assume that any missing part(s) came off mid-flight may have had a role in what caused the crash

Yes they will try there best to put the plane back together the best they can but they will only really put planes back together if it is a smaller type of plane like the one you were playing with or if it is a expedition on the plane and it didn't crash
