Morocco follows Greenwich time, because that makes sense. Spain opted to not have a different timezone from Western Europe, which isn't logical from a sunset/sunrise point of view but it does make sense from an economic and 'convenience' point of view.
Just watched your Europe tour. Can't believe you're in my home country. You'll love it here i'm sure. Touristic cities maybe less. I mean it depends on what you're looking for. If you follow a route through Atlas villages you'll be amazed. Have fun. BTW, we're in ramadan and we tend to set our clock on GMT time. The other 11 months it's GMT+1.

Talking about time if you're here during Ramadan we remove the extra hour added for summer time. We add one hour for the rest of the year. In Europe they add one hour too that's why. It has nothing to do with sunset or sunrise. During Ramadan when sunrise and sunset matters for fasting we use the natural hours.
Morocco is currently using GMT (as it should actually) that's the reason of the 2 hours difference. BTW watch out from the street dogs, they could be agressive in packs

most Moroccans don't speak french anyway, saying bonjour might be seen as an insult if the one who said it isn't a foreigner, also the people greet eachother the islamic way as you said
