At first, I didn't really believe that such bread could turn out without any leavening agents, but now I know for sure - it's fantastic, and the reason is psyllium fiber, which replaces gluten (if you can say so), binding the particles of flour. Yes, you can add different flours, not only prepare baked goods based on psyllium, for example: almond flour bread, buckwheat flour, and so on. It's no secret that such flours do not contain gluten, and psyllium then comes to the rescue. After the bread has fully cooled down, I store it in a closed container in the refrigerator, and it doesn't dry out or harden, remaining the same in taste and softness.
