After it's fully baked, I top my corn casserole with warm bbq pulled chicken or pork, then layer of shredded cheese. Pop back in the oven until the cheese is bubbly. Garnish with green onions. Delicious!
Years ago I found a Marie Callender's Copy cat cornbread - it was made with 1 Jiffy cornbread and 1 Jiffy cake mix with either oj or pineapple juice subbed for the water and eggs as the box indicated. My Mother made this recipe for years always calling it my recipe.

In a pinch, stop by Wendy’s on your way home, buy their chili. Pour into baking dish, pour over the cornbread mix, top with cheese till cornbread is done. Great very quick dinner….
What I do is buy rolls of polenta and good canned chili if I don’t have my own in the freezer. Put a layer of chili on the bottom, then polenta slices for another layer, then shredded sharp cheddar cheese, repeat the layers until your dish is full and cook in the oven until bubbly, removing the foil at the end to brown cheese on top. Delicious and takes about 5 minutes to assemble.

@tinasadauskas9937 The cooked hamburgers from the previous day that are refrigerated and then chopped to use in a chili. There's nothing wrong with that from a food safety or food eating-wise.
As a Texas/Southern girl by birth and location, Jiffy Cornbread has *always* been my go to! Love the texture and flavor. All year 'round, it's delicious.

I love Jiffy corn bread mix because it's sweet. But my husband doesn't like it. I ate corn bread as a sweet dessert growing up. I later learned how to make corn bread from my mom in-law, unsweetened! Lols. I like both of them. 😊

I am only going to beg you to please READ the front of the box. It is NOT corn bread. It is corn muffin mix, and believe it or not, there is a difference. Corn muffin mix is sweeter than corn bread. I know no one wants to read anything anymore, but, give it a try . It's only a box front. Not a book. Bless your heart.

Having cornbread mix in the pantry is something most of us southerners do!😋 Your first recipe is like something we make and call it tamale pie. Of course, there are some other things we put under the cornbread. We also use green chilies, a little can of goodness that comes in different levels of heat. You gave us some great recipes for the cornbread mix, as always! These recipes are very similar to dishes we make. I haven't had dill pickles used like that but I'm always willing to try something new (at least once). Thanks for sharing more great recipes!😍
Nicole, have you ever used the polenta in the tubes? Trader Joe’s, many years back, was sampling a dish that I loved and still make frequently in cool weather because it’s so quick and satisfying and feeds me for days. Delicious and literally takes 5 minutes to assemble. I would be interested in more recipes using tubes of polenta.
