Instructions:
Heat the Milk:
Pour the fresh milk into a large pot. Use a thermometer to monitor the temperature. Heat the milk slowly over medium heat until it reaches around 180°F (82°C). Stir it occasionally to prevent it from sticking to the bottom.
Add Acid:
Once the milk reaches the desired temperature, add lemon juice or white vinegar. Start with about 2-3 tablespoons of lemon juice or vinegar. Stir gently to combine. You should see the curds forming and separating from the whey.
Curds Formation:
Let the mixture sit for a few minutes, allowing the curds to fully form. If needed, add more lemon juice or vinegar until you see a clear separation between the curds and whey.
Drain the Whey:
Line a colander with cheesecloth or a clean kitchen towel and place it over a large bowl or in the sink. Pour the curds and whey into the colander, allowing the whey to drain away. The curds in the cloth are your future cottage cheese.
Rinse the Curds (Optional):
Some people prefer to rinse the curds with cold water to remove any residual lemon juice or vinegar taste. This step is optional and depends on personal preference.
Season (Optional):
If desired, season the cottage cheese with a pinch of salt. You can also add herbs, spices, or other flavorings to suit your taste.
Serve or Store:
Once you're satisfied with the texture and flavor, your homemade cottage cheese is ready to be served. Enjoy it immediately or store it in the refrigerator for later use.
