Everything is on point just a little correction : 1. We don't eat in Pital (Brass Metal) rather we eat on Kah (Bell metal ) 2. It's Machor Tenga । Mach = Fish not Masoor tenga. Masoor is a Dal. 3. Don't eat Tenga (sour) in brass/bell metal as it may react with the acid. 4. In Amita Khar (Papaya dish one) we dont saute them in mustard oil and all. Its a pitika (boiled - mashed) side dish where we boiled the papaya simply and then mash it adding salt mustard oil and khar. Khar is obviously not baking soda its an alkaline sollution made it with the asses of banana leaf. If its not available, you can simply avoide it and make Amita Pitika. 5. As our dialect is different from bengali we dont call it Sutki but Xukan / Sukan which means dry. And its not mandatory to have Dry fish. You can simply take a fried fish remove the bones and mash it adding salt lime juice coriander mustard oil and onion. We too have normal Machor Pitika. Rest everything is fine and thanks for the effort ❤
Exactly. But with khaar in lower Assam, where my mother is from, they put fish head as well. In my dad's place, they make small fish khaar along with papaya. And also in duck meat we don't normally use meat masala. In Breakfast, Kordoi doesn't need carrots and other veggies. It can be, actually most of the time it is, sweet. But I appreciate the whole effort.
Really appreciate your effort in trying to make Assamese food. I just want to point out some point.... 1) in 'omita khar' the pappaya must be totally mashed and add little bit of soda and aloo is not added. 2) for the fish curry boiling the potato is enough, no need to boil tomato. Add the tomato directly to the oil after adding mustered seeds. Other recipes you have done good. Keep going👍

Good to see this vlog. Being from Assam I can assure you that Assamese people eat a lot of fresh stuff. They are used to eating spicy but has to be the natural spice ( green chillies, fresh red chillies and bhootjholokia). Powdered spices are used to the minimal. Everything was good with the pork dish but you could have skipped the meat masala just to maintain the true authencity of the dish. Just a humble suggestion. However it was an amazing attempt. Keep it up.
I really appreciate your effort Dii for presenting our Assamese cuisine in such a beautiful way , also I wanted to add something related to omita khaar; it is basically made by the using fully burned banana peel by smashing it into a powder and lastly adding it to the curry .

How were you planning to cook dry fish? In upper Assam, Dry fish (preferably mua or puthi) is pounded with colocasia leaves and salt in a dheki to make a paste. This is called Hukoti Maas in Assamese. This lasts for months and months and can be streamed in leaves to consume for later meals.

I am a Bengali girl from Assam married to an Assamese family and yes here we use kashar (bronze) utensils for eating rice platter. But we also use steel, brass or modern dinner sets, but bronze will be there in every household for rice platters as well as "jolpan"

Sutki fish chutney is not a ASSAMESE dish its a bengali dish we the assamese people we have learn to cook it from bengali people only so as your mom is bengali it's her dish, not of assam.

5:00 yes Assamese people eat in bell metal utensils. Which is even good for health due to some scientific reason ( that I don't know 😂) . And also my hometown is sarthebari which is the bell metal town of Assam where you can find bell metal industry. And I always eat in bell metal utensils 😁. Do visit Assam .💕
Thanks for representing our cuisine. Really appreciate it. To your question about do we really eat on dishes made of brass i.e pital the answer is yes. Also please avoid including bengali words in between assamese. Eg. Its not Aloo bengun pitika but aloor aru bengenar pitika,not lai shakher gahori mangkho but lai xakor gahori mangkho. Not being rude but this is because people still think Bengali and Assamese languages are same and that is because of the lack of knowledge about our culture and cuisine.

All are perfect but one thing u had to chop the omita into little pieces coz when we make omita khar it lose the shape like it's becomes mashy btw I love you for this😌😌😌
Whatever u cooked was all very tempting.. u cooked all the dishes in a proper way .. I really enjoyed the vdo.. but one thing is missed up. U could have had pan after a meal. Coj we assamese people offer pan tamul in every occasion, puja, to guess etc..but anyway it was good😊👍
The most easy and delicious recipe is boil 3 potatoes with rice and then make the aloo pitika as spicy as possible(better with ghost papper). Pour some water in the rice and salt and pitika then enjoy with a onion.
In masor tenga we dont add so much potato. Usually you can add a little mashed potato to thiken it but you can avoid it all together and you dont need to boil the tomatoes.
