That's rice water called as Pakhala in Odisha...it's the absolute comfort food of Odisha. It instantly hydrates the body. So in summer people eat it almost everyday. You can also add mint leaves in this.

Poita Bhat is also called "PAKHALA" in Odisha. Its a soul-nourishing food to eat especially during summer afternoons. Its usually eaten in lunch and also you can try eating it with spicy roasted tomato-garlic chutney; I can guarantee you'll be coming back to this dish again. Thank you for making poita bhaat of Assam ❤ love love! We eat this without the dahi too like with achar and dry fish and bhootjolokiya!!!! For a fact that northeast Indians have more spice tolerance than other Indians bcz we eat raw bhoot jolokiya too which is like one of the hottest chillies in the world! In Bengal its called panta bhaat! I'm a bengali from Assam so in love w both the cuisine and culture ❤

Seeing Gopali trying "Dahi Pakhala" While having it hits different❤ also next time do 1 thing, Fry Red chillies and Jeera and curry leaf in mustard oil and put that on the water rice, after putting Dahi.... It will taste awesome❤ Love from Odisha😉
