When I first got rocket league 3 years ago, I used ALL servers, instead of just where I'm from, so every other match I played in an EU, Japan, OCE, etc. My point is, I didn't understand lag and I didn't know why my car was acting weird 😂

You were really close, just mixed up Asia SE - Mainland and Asia SE - Maritime. Mainland (abbreviated as ASC) is actually near Taiwan. Maritime (abbreviated as ASM) is the Singapore server. So the guy from Singapore was in fact playing on the Taiwan server, which very understandably messed you up a bit :P
