Accompanied by a steaming cup of barako coffee or tsokolate batirol, this meal captures the rustic charm of the Philippine countryside, combining local flavors and the warmth of a traditional Filipino morning.
As a vegetarian version of this pinoy breakfast, I prepared fried rice, fried eggplant, steamed kamote tops, tomatoes and veggie longanisa made from banana blossom, TVP, oyster mushroom and oatmeal.
