With the boat, there are only 2 ways that the cannons could have sunk it from that first position: 1, hit the boat so hard from the side that the boat rolls until it capsizes, and then the capsized superstructure floods with water; 2, hit the boat so hard that the hull below the waterline somehow glitches out and gets damaged, allowing the boat to sink despite largely-superficial damage.
