Servants are nothing more than caricatures of the original based on specific parts of their Historical, Mythical, & What-iFs Lores. Hence why most of them look waaaaay different from what people imagined.
They are certainly _influenced_ by popular conceptions of them when summoned as Servants, but that's not all they are. If that were the case, King Arthur would have manifested as a man when summoned because that's what she pretended to be.
