I don't speak most of these languages, but I can confirm that for Swedish, Norwegian and Danish, it is indeed "I shouldn't have said that". But I can't confirm for all other languages.
I can hear it too in the way “Nicolas Flannel” is pronounced. I have to admit I didn’t really notice this until it was pointed out. I can usually understand 99.9% of Flemish on tv. The differences are often very subtle.

In some of these dubs, Hagrid sounds very, very distant and difficult to hear. I feel like during the edit they should have corrected this, as it is clear with these side-by-side comparisons, that not in every language the volume and loudness of Hagrids voice is the same.
Ehm... The Belgian and Holland Dutch are switched (1:42 & 2:39). It is strange to hear Hagrid speak a typical West Flemish accent. Even more crazy to hear the "Dutch" Hagrid say this instead of a Belgian - West Flemish Hagrid.
