UI is dead but I still get the odd UX job. Friends are still getting motion graphics jobs and its tempting to go that route but if all graphics designer do, the salaries will drop. I've thought about doing talks about AI. It pays well 1000-2000 euro per talk and I think most artist at this point knows more about it than most. Maybe that could be something you could explore, but I think you have to do the first ones for free.

Maybe try any entry digital mkt, web content mgmt, technical documentation roles.

Hope things work out well for you, maybe you can even start making those 100 days videos to grow your youtube channel lol

Can you try learning ML while looking for jobs? You can start ypur own company in automation. Give it a thought. Every thing is hard but if you are willing to give it your all u can do it cheers
