This is because soaps are basic. Turmeric is an acid base indicator. Another example of an indicator is the extract of some flowers such as hibiscus. Boil some hibiscus petals in water. When you put soap in it, the solution turns from pink to green. This is because soap is basic and the indicator in hibiscus flowers turns green in presence of soaps and light pinkish in presence of acids. Indicators are substances which change their color (or smell) after coming in contact with acids and bases. Yellow highlighters contain such an indicator. As lemon juice is very acidic, the indicator changes its color from yellow to colorless in the presence of the acid.
