Heyyy Fam!!!!
So in true me fashion, what started off as an innocent and easy enough small batch canning project quickly turned into over a dozen pint jars of pizza sauce and then some. i was literally up to my was in pizza sauce. In preparation for my urban homesteading journey and my ( hopefully) fruitful tomato harvest i decided to get creative and can up my very own pizza sauce. well that didn't go as planned and i had an abundance, which simply meant i could experiment with my freeze dryer.
Recipe:
Ingredients:
5-6 lbs roma tomatoes halved
1 large chopped onion
2 TBS of minced garlic
2TBS of Oregano
2TBS sugar
1/2 tsp of pepper
2 bay leaves
additional seasonings to taste
2TBS BOTTLED lemon Juice
1/2 tsp pickling salt
In a roaster or pot add all ingredients except lemon juice and pickling salt.
let it cook down for about 3-4 hours on medium
place contents in blender and blend well.
taste.. add additional seasoning if needed
add lemon juice and pickling salt and blend again
jar leaving 1/2 inch headspace and process in water bath canner for 35 minutes.
