i worked retail. it's mostly company policies, but in the case of privately owned stores, it's so you're not filming other people and employees. especially if you're filming and making other customers uncomfortable, it can hurt business and management always strives to make everyone happy. another thing is competition from other stores-copyrighted logos and product displays are different in most companies, and stores try to make it as hard as possible for their competitors to copy image designs and layout. if you ask beforehand, some places might allow you, but everyone should be respectful if there are 'no camera/filming' signs, and if they're asked to leave.
