Brilliant video as usual Randy! One thing to consider is these places could be given a 0 food hygiene simply due to insubstantial paperwork; there may not be anything wrong with the physical cleanliness or handling of the food at all.

Just so people know, 1-3 ratings are mostly about the cleanliness and 4-5 ratings are mostly about the paper work. So you could have an absolutely spotless business but if the paper work isn't done correctly, you can lose a rating or 2 (example of paper work: recording fridge temps)

I think there’s certain things that will get you an automatic 0 score but aren’t necessarily overly bad… for example, not putting expiration dates on food in your fridges etc.

Food inspections are nerve racking, you have to ensure you have a fly contraption, fridge and freezer temps record (daily log), food labels, correct storage of food, general cleanliness, correct bin storage inside and out, condition of the kitchen, up to date certificates. I remember we lost a star because they came in during which can become messy with bins full etc and there’s nothing you can do, so depending on the inspector but we appealed it. It’s more than just food itself its also drinks etc such as barrel stores and bar areas

For context: I believe a rating of "0" is given when there is no record of business processes & procedures for managing food. Not necessarily an unclean premises but concerning the business has no records on how they manage the food and keep the premises clean.

Sometimes they give 0 for things like electrical faults and also if they don’t sign of a book of daily checks it’s 0. It doesn’t always mean it’s dirty

Once a venue gets a 0, they get a list of to-do actions which normally they implement quickly. Until the next review it stays as 0

The problem with this is Randy is probably going in the middle of the day when it's not busy and noones in a rush. The reviews are probably there when there's like 30/40 people in the line, some are next to pubs so the people are probably pissed so the workers are probably throwing the food out ASAP even if its not fully cooked etc.

Next video should be Randy tasting a 5 star and a 0 star, not knowing which is which and then having to guess which is which… so u can really see if the ratings are fair
