Burritos are absolutely delicious. It is one of the most popular dishes in the world. You can fill a burrito with anything you like.
You can use leftovers and create your own unique recipe.
Personally, it was hard to make it for the first time. It took much time.
I suppose, making burritos is a weekend recipe, when you can manage to spend more time in the kitchen.
I needed to:
1. Wash vegetables;
2. Cut it (chop or dice);
3. Cook a burrito filling in a large frying pan (about 15 min);
4. Roll burritos (it is hard without any practice, do not overfill tortillas);
5. Toast it;
6. Clean up all my mess;
7. But… it was worth it!
Ingredients (for 4-6 people):
courgette or zucchini 1
store-bought tortilla wraps 8
sweet corn (drained) 140 g
grated cheese 150 g
shredded cabbage 150 g
red onion 1
garlic clove 1-2
bell pepper 2
tomatoes 2
lime 1
ground chicken 350 g (You can skip meat)
tomato ketchup and sour cream to spread on tortillas (to make it more flexible before rolling burritos)
salt and paprika powder to taste
sunflower oil 2 tablespoons
Method:
1. Heat the oil in a frying pan, add and cook onion, garlic and bell pepper 3 min, stirring, high heat;
2. Add ground chicken and seasoning, cook 5 min, stirring;
3. Add courgette and sweet corn (drained), cook 1 min, reduce the heat to medium heat;
4. Add tomatoes and cook (simmer) now all together 5 min.
5. Fill, roll, toast.
