The coolest part about this series is that you showcase a lot of places (Like Izzy's) that are unique to Minnesota! I go to school in Mankato and have a boyfriend in Minneapolis, so the next time I visit him I'll have to check out Izzy's and tell them we found out about them through your show!

Ivan Travels Salt, or even egg yolk, can be the stabilizer. Another word would be emulsifier. The stabilizer/emulsifier's job in ice cream production is to prevent the formation of water crystals that would separate from the fat. Instead, it bonds the water and the fat together forming a smooth product. Most commonly used today, though, is mono- or di-glycerides, or Polysorbate 80 derived from plant based or animal based sources.

There used to be an ice cream store near where I live. They would use all natural ingredients and freeze the ice cream with liquid nitrogen. Too bad they didn't get the business to stay around. I was shocked to find it closed down a year or two back. Still miss it, but I'll never forget showing it to my mom and dad. They were quite impressed with it.

Apparently it is a bit of a hassle and takes a lot of milk when using goats milk, but if you could have gotten cream from the goats milk and made a cooked custard before freezing, your ice cream would have every bit bit as creamy as Izzy's. What you made was actually ice milk, hence the frozen crystals you observed.

Love your series, my only issue is play-a-bility, I found i had to click around to find the different parts of a few of your series. +Danger Dan To carbonate the root beer it needed to be sealed air tight. Unfortunately we were unable to make a cork stopper for our bottles, otherwise we would have.

They also have cacao pods at Como too, but I feel they might not like me coming in and helping myself to their plants. We tried to get vanilla while in Mexico before, but after driving an hour to the farm, they ended up already being harvested.

How did the root beer itself turn out? How did it compare to commercial root beers in taste and carbonation?

It still had a strong root beer flavor, but the maple syrup that was used to sweeten it definitely gave it a unique taste. It didn't really stand out as tasting like any specific commercial root beers to me, and while still quite good I don't think it was quite as good as anything store bought. The carbonation in it was a little flatter then store bought, but pretty close.

Whenever Andy interviews someone, he looks totally uncomfortable, and while it's a bit off-putting from a viewing standpoint, as a strong introvert, I just keep empathizing with him, so it really kind of helps the experience for me! Though I'm glad he's kind of worked on that, it seems, since these earlier episodes. It is a little distracting.
