Idli podi - also known as Milagai Podi in Tamil, which translates to Chilli / Spicy Powder... Idli podi is also known by various names across South India such as Idli Karam Podi, Gun Powder & Chutney Podi...
Basically, a coarse Spice Mixture Condiment used as a side dish for South Indian Breakfasts....
This Spicy Powdered Condiment is served with Hot Idli & a drizzle of Unrefined Sesame Oil Or Melted Ghee....It's very common for South Indians to Sprinkle this over Idli, Dosa, Uttapam, Upma, Upma Styled Sawiyan, Plain Rice, Curd Rice & Lemon Rice.....
However, it can also be treated as a multipurpose spice mix that can be a taste enhancer for any breakfast recipe....
They are Roasted to bring out the flavours, cooled & then ground to a coarse powder in a Mixer Grinder..... The resulting orangish-red powder is a tongue twister in every way.....
There is a slight crunch in it from roasted lentils, smoky, pungent, nutty taste of everything is all felt at once....
