Y'all. Y'all. Y'all. Let me just tell you about the Apple Pandowdy. I know that it looks like a cobbler, but it is different. Good different. The bread in this dessert has a dumpling like bottom and a crispy biscuit like top, and the filling, all I can say is that it is AMAZING! So, apparently Apple Pandowdy has been around since the 1800s, and somebody back then knew how to bake, because they got this one right! I'm sure their recipe was a little different back then, but this one is a must try! Make it this weekend! You won't be sorry. You're welcome. 😄👏💕
Apple Pandowdy (With the biscuit top)
Ingredients:
1 cup brown sugar
1 1/4 cup ap flour
1 tsp salt, divided
1 cup water
1 tsp lemon juice
2 tsp baking powder
7 TB butter, divided
3/4 cup milk
3-5 apples, peeled and sliced (you can use any kind of apple)
1/2 tsp cinnamon
1 tsp vanilla
1 tsp cinnamon sugar
Directions:
Preheat oven to 350 degrees.
Combine brown sugar, 1/4 cup flour, and 1/2 tsp salt in a pot. Add the water and lemon juice. Cook over medium heat until it begins to thicken. Remove from heat and add 2 TB of the butter and vanilla. Mix well and set aside.
In a large bowl combine the other 1 cup of flour, 1/2 tsp salt, and the baking powder. Mix well. Cut in the other 5 TB of butter. Add the milk and mix to form the dough. Dough will be runny.
Spray a two-quart casserole dish with cooking spray and place sliced apples in the bottom. Sprinkle apple with cinnamon. Pour brown sugar mixture over apples. Drop dough by spoonfuls all over the top. Sprinkle dough with cinnamon sugar.
Bake for 55 minutes.
Serve with ice cream or whipped cream.
