海參處理過程
怎樣浸發海參?
第一天:
1. 先預備海參4條。
2. 預備一支新的牙刷。
3. 海參,放入一個乾身的玻璃盤內,加入清水浸一分鐘。
4. 開住水喉,用牙刷刷乾淨海參,放碟上。
5. 大火煲滾一煲水,放海參,冚蓋,大火煲2分鐘,熄火,攤凍,直至煲完全冷卻,大約需時30分鐘,放入4度雪櫃,繼續浸。
6. 海參,每隔12小時,從雪櫃取出海參,倒去水分,加入清水繼續浸。
第二天:
1. 海參的重量,已增加大約一倍,倒去水分,加入清水,同時用手感覺一下軟硬程度。
2. 預備一煲清水,加入海參,大火煲滾,大火煲10分鐘,熄火,攤凍,直至煲完全冷卻,放入4度雪櫃,繼續浸。
第三天:
1. 海參的重量,已增加大約3倍,它已到達一定的軟硬程度。
2. 預備清潔的剪刀。
3. 打直剪開海參,開住水喉,清除內臟及頂部的沙嘴,再用清水完全沖洗乾淨。
4. 洗乾淨煲。
5. 預備一煲清水,加入海參,冚蓋,大火煲滾,大火煲10分鐘,熄火,攤凍,直至煲完全冷卻,放入4度雪櫃,繼續浸。
第四天:
海參的重量,已增加大約8倍,它已到達一定的軟硬程度。
海參儲存方法
浸發好的海參,用清水浸,放入4度雪櫃,早晚換水,最好在3日內食用。
如未知道食用時間,用保鮮紙逐條包好,再放入密實袋,放入冰格,食用前先解凍就可以了。
浸發海參要注意的重點
1. 所有盛載海參的器皿,都要清洗乾淨,避免殘留油漬,如果海參接觸到油,就會增加它變壞的機會。
2. 每次接觸海參前,必須清潔雙手,如果手部接觸過潤膚露的物料,海參接觸到這些物質,都有機會變壞。
3. 浸發海參的水,一定要用乾淨的清水,這是常識吧。
4. 在浸發的過程中,水是有可能接觸到其他物資,換水就是重新加入清潔的水,海參就可以發得更大更完美,這是早晚更換清水的重要性。
How to soak the dried sea cucumber?
Day 1:
1. Take out 4 sea cucumber.
2. Prepare a new toothbrush.
3. Sea cucumber, put in a dry glassware. Fill water and soak for a minute.
4. Brush the sea cucumber thoroughly under running tap. Put on plate.
5. Heat up a wok of water at high flame. Put sea cucumber in the wok. Cover it up. Boil for 2 minutes. Turn off fire. Wait for totally cooling down. This takes about 30 minutes' time. Put in refrigerator and continue to soak.
6. The sea cucumber, take out from refrigerator for every 12 hours' time, for changing the water to the continuation of soaking step.
Day 2:
1. The weight of sea cucumber, has been doubled up. Pour away water. Add in tap water. Feel the softness of the sea cucumber with your hands.
2. Prepare a pot of tap water. Add in the sea cucumber, heat up at high flame. Boil it at high flame for 10 minutes. Turn off fire. Wait for totally cooling down. Put in refrigerator at 4 C, continue to soak.
Day 3:
1. The weight of the sea cucumber has been increased thrice. It has been reached to a definite softness.
2. Prepare a pair of clean scissors.
3. Cut the cucumber vertically. Remove intestines and its sac on top and rinse it under running tap. Rinse thoroughly.
4. Rinse a pot.
5. Get ready for the pot of water. Add in the sea cucumber. Cover it up. Heat up at high flame. Boil at high flame for 10 minutes. Turn off fire. Wait for totally cooling down. Put in refrigerator and continue soaking.
Day 4:
Weight of the sea cucumber has been increased for 8 times. It has been reached to a specific softness.
The storage of soaked sea cucumber
Soaked sea cucumber, put in water. Store in 4 C refrigerator. Refresh water during days and nights. Consume within 3 days.
If you have no consumption time table of the sea cucumber, pack it one by one with cling wrap. Then put in lock bags. Put into freezer. Defrost before consumption.
