Whiskey Sour - A Brief History: The whiskey sour was first seen in print in Jerry Thomas’ 1862 book The Bartender’s Guide (amzn.to/2BHARXW) but of course it had been around some time before Jerry’s book. Jerry’s recipe called for a wine glass of bourbon or rye, the juice of half a lemon and a large teaspoon of powdered white sugar dissolved in sparkling water. It was served in a claret glass and garnished with berries. The drink evolved and the egg white component was added later but is often referred to as optional.

PunchDrink.com sought out the Ultimate Whiskey Sour recipe by inviting 17 of America’s best bartenders to submit their finest recipe for the Whiskey Sour-then blind-tasted them all to find the best of the best.
Nearly half of the drinks submitted were served on the rocks, and many called for the addition of an egg white.
The top 3 whiskey sour recipes shared several common attributes; they called for 60ml (2 ounces) of whiskey and made use of egg white for added texture. The top spot was taken out with a rye whiskey based sour that had the unorthodox addition of orange juice whilst my personal favourite took out the Bronze.

Neal's recipe is my personal favourite of the 3 finalists. Using a Bourbon Whiskey base makes it the sweeter of the 3 but boasts fragrant aromas from the mist of Angostura bitters which finishes off the drink nicely.
INGREDIENTS
- 60ml Evan Williams Single Barrel Bourbon (2 oz)
- 22.5ml Lemon Juice (0.75 oz)
- 22.5ml 1:1 Simple Syrup (0.75 oz)
- 15ml Egg White (0.5 oz)
- 1 Spray of Angostura bitters
WHISKEY SOUR #2 (by Erik Adkins) - bit.ly/whiskey-sour-02
Erik's recipe is slightly more acidic than the other 3 finalists, I felt that the balance was slightly off (personally). The recipe calls for a Bourbon Whiskey and is close to what would be referred to as a traditional Whiskey Sour.
INGREDIENTS
- 60ml Buffalo Trace Straight Bourbon (2 oz)
- 22.5ml Lemon Juice (0.75 oz)
- 15ml 1:1 Simple Syrup (0.5 oz)
- 15ml Egg White (0.5 oz)
WHISKEY SOUR #1 (by Dan Sabo) - bit.ly/whiskey-sour-01
Dan's was a very close 2nd place in my books. It calls for a 100 proof Rye Whiskey along with higher portions of citrus and sweetener to retain balance of strong, sweet and sour. The unorthodox yet welcome addition of a small amount of orange juice contributed a sweet, softer acidic component.
INGREDIENTS
- 60ml Rittenhouse Rye 100 Proof (2 oz)
- 30ml Lemon Juice (1 oz)
- 15ml 2:1 Rich Simple Syrup (0.5 oz)
- 15ml Orange Juice (0.5 oz)
- 15ml Egg White (0.5 oz)

You aren't as presentation driven as some other RU-vid mixologists, but you have a way of presenting your work cleanly, directly, and to the point. Even a novice could learn easily from you, and that counts for a lot. My wife thinks you are adorable, and the drinks you make make me want to taste them. All in all I really enjoy your show. Presentation is important. But for RU-vid tutorials, getting the basics should be first priority. Perhaps there could be other videos on presentation to fine tune the drink a little more

Hi Steve! For #3, the classic one you preferred. When adding the simple syrup, add a teaspoon of the cherry syrup from the Luxardo cherries. That hint of cherry in there adds a nice layer of complexity 😁

I have just made the orange 🍊 one and it is just like drinking paradise!!! I am sooo glad you shared this! However the people that I live with will not toutch it because of the egg white. They don't know what they are missing! Simple syrup Egg white Two lemon 🍋 juced Lemon rind, grated Juce of an orange 🍊 with grated rind Shot of Famous Grouse whiskey Two glace 🍒 cherry Blitzed in a blender and poured over a giant whiskey ice cube. It filled a whole mason jar and absolutely delicious, never ever skip the egg white.

Editing my initial comment: the #1 recipe is awesome. I had to try it a few times before my palate got used to it. I add 2 dashes of Fee Brothers Orange Bitters when serving with a ball of ice. Thank you for posting and much love from Texas.

Steve, thank you for being the bartender you are. I loved your exhibit of the whiskey sours. It's one of my favorites. This is one of the easiest, and most tasty cocktails and it really is about preference, but I do like the angostura touch. It puts a nice mature finish to this cocktail.

I’m not sure if i consider it one of the easiest cocktails since it does involve prep work or preparation of lemon juice and egg. To me the Martini, Old Fashioned, Gin and Tonic would be considered easy to make since it requires no preparation of food ingredients

Literally the day before watching this video, made version one but with the exact rye whisky from version 3. As you thought would be the case, it is incredible and will likely be my new standard! All the sweetness and aromatics of the first, but with the extra punch and underlying spice of the rye. Great video. Thanks for sharing!

Great video Steve, as always! Number 1 has been my go-to recipe and it's exactly how I do it too, except for putting the angostura bitters dashes in the foam instead of spraying it. I usually make it with Maker's Mark but would like to experiment with other bourbons and whiskies. Now I want to go to the kitchen and make myself one!

I’ve been adding a touch of fresh OJ to my sours and I can tell you that it works magic! I also prefer Ryes. Try Dry Fly wheat whiskey with some rhubarb syrup. Heaven!

Came back here to say, I came across this vid about a year ago. I made the #1 sour for all my guests last Easter. I used Buffalo Trace and because of that, I reduced my lemon juice to 3/4 ounce, and just had regular simple syrup on hand. Didn’t change that amount. Every single person that had one LOVED it. One person said the the Whiskey Sour was always their drink of choice and was skeptical, but was quickly convinced. Nice work. Stocking up for this weekend again.

As a fairly new bartender, I like to put grapefruit bitters in mine. Combining citrus and citrus just seems like a safe bet (I’ve got a history of going too hard on the angostura bitters).

For the whiskey sour #3, the original bourbon, Evan Williams single barrel, has a salty peanut taste to me. I have never made a whiskey sour with it but I would think it would add some unique notes to it. I usually use that bourbon for a black walnut old fashioned. It is one of the most interesting bourbons I've had and it is very affordable.

Whiskey Sour is my favorite drink! Mine have always been pretty much identical to Erik Adkins' (I happen to like the acidity). Also, my one-year thinks the sound of the shaker is hysterical, and she cracks a big smile every time she hears you start mixing a drink in the videos!

My favorite version goes like 60 mL scotch, 30 mL lemon and 22.5 mL syrup along with half an egg's white. Served in a chilled coupe with no ice, dash of Angostura bitters on top of the foam. Rim with lemon peel and discard if I really want to impress, draw through bitter drops using a toothpick like cappucino art for overkill :) Always love your videos, cheers!

Love whiskey sours and have been experimenting recently. 2 oz Jim Beam, between .5 and .75 oz simple syrup, .75 oz half lime half lemon juice, fresh squeezed of course. Going to have to try adding bitters though. I like mine sour, my friends like the sweet variety. Curious what others think.

I really like that the recipe tells to shake the egg white and the lemon first, as i HATE egg smell and I guess this step really kills it. Wonderful drink! Can be better as I learn to make it more foamy as in the video, but the taste and smell was perfect! :D

I still have to finish the video, but I wanted to comment on something Steve said. I always had a whiskey sour served up and actually I do not like when it's served on the rocks. The presence of the ice and the dilution (even if it's slow eh...) break down the foam quicker and the texture is gone pretty soon. Just a preference, not saying that the other method is wrong :)

I must admit I did like the fact that the foam doesn’t dissipate like when it is served on ice.. I just didn’t like that particular ratio in the 2nd recipe served up.. will definitely be trying the other two in a coupe next time 👌

I always serve mine up in a coup. But I also ad a dash of bitters in the mix, and a few drops on top of the foam as decoration.

Yeah, I always do mine in a coupe, or one of those stemless martini type glasses when I'm feeling less fancy.

Just made this following the 3rd place recipe, but I used Auchentoshan, a very maple/brown sugary whiskey and I can say with ease, I’m getting pretty wrecked on them. 🤣

Had the Sabo version today and for my first ever Whiskey Sour it was fantastic. I like my ryes and I definitely agree with you that it gives it a better taste. I tried also with Bourbon and rye is the key to it.

Steve the Bartender no. But I am not very sensitive to peat ;) It adds a lovely earthiness and the peat comes rolling in as an after taste. I just love it. But it jacks up the price of the cocktail a bit 😅. 60 mL Ardbeg, 20 mL simple sirup, 20 mL lemon juice

Whiskey sours are my favorite drink of choice. Watching you drink these just made me want to make one. I prefer the sweeter version so I would say the first one you made would be ideal.

i just made one similar to that last one the other night and it came out so good! but instead of oj i used mathilde orange liqueur (brings a lot of its own spice that stands up to the rye pretty well), demerara syrup, and a dash of peychauds. would definitely recommend if you have that on hand
