Fish were purchased from the local market, keep alive in an aeration tank. The fishmonger will process it for you or you can take it home and process it yourself.

Cá lóc sống cho vào đá làm con cá nó bớt tanh và nhớt ,sau đó bỏ muối xát rửa đánh vẩy nó sạch phần nhớt ngoài thân ,um với chuối non ,ngon tuyệt cú mèo ,cá này chế biến rất nhiều món ,như nấu bánh canh bột gạo ,bột lọt ,bột mì ,hay nướng trên than ,con cá nó khô rồi kho với ớt gừng ,hay làm nỗi lẫu chua cay ,ở quê tôi gần đến tết nguyên đán chuẩn bị vài cần cá nướng khô này cất trong tủ lạnh ,đem ra kho ăn mấy ngày Tết ,chỉ ở quê tôi mới có món cá nướng kho tộ này là nổi tiếng ngon tuyệt cú mèo
