The food in Toyama (especially the seafood) is truly spectacular. It's only 2 hours from Tokyo via Shinkansen and just a few minutes away by bullet train from Kanazawa. We really loved the delicious local sake as well which matched the seafood perfectly.

I am so enjoying these food tours, STJ! Finding out the various specialties in different places means I'm always learning new things about the various regions of the country. Everything looked delicious, though I am shocked at the lack of dessert 😂. Really excited for the next trip!

Oh this made my mouth water so much! Chirashi is my favorite order in a sushi restaurant. And the price! I pay a lot more in the US for something like that!

The food is always enticing, but is so much raw fish safe to eat? I wish we had a real Japanese restaurant here in Utah.

Same here in Wyoming but it doesn't seem to be harmful as long as it is fresh fish....which is hard to really come by in our states that aren't near the ocean. I do fish the river fish at least but always cook it lol

99.9% safe to eat!! Especially if you live in a place like Toyama, with direct access to one of the finest, most diverse fishing grounds in all of Japan. 🙂 Utah--you might want to be a bit more careful.

In Japan, according to food safety guidelines - fish which is served as Sushi or Sashimi is first flash frozen to -35F/-37.2C to kill any parasites which may be present. Other countries may necessarily not practice flash freezing of fish that is utilized in raw preparations.

In Japanese cuisine, Chestnuts are typically boiled in salted water, which results in that deep coloration.

I actually do not like raw fish/ sushi. But I've been told i just haven't had the right sushi. Which i believe,lol.

Lovely food tour. The bento box you had on the train was very nice. Both your sushi meals were delicious. The only thing missing was the dessert. Nice & reasonably priced hotel room. Will see you in the food tour. Take care, stay safe.

I also did not like fish as a child. I still do not like salmon unless it's prepared as sushi or it's been marinated to get the fishy smell out

"I don't what it is but I'm gonna eat it!!" 🤣 🤣 🤣 It's not that I don't like raw fish, it's just in America, you don't know what you're going to get. In Japan, there must be self governed stands or something. In America, they don't care if you live or die. You could get something fresh or something that's months old, that's been frozen, thawed, re-frozen and thawed again. People get horribly sick from being cool and suave for eating sushi here. So I just leave it alone.

In the United States there are many states that you should never eat raw fish / sashimi style sushi because the quality of fish is not high. In Japan the quality of fish is extremely important and so they can eat it raw. In the US I would be concerned about getting parasites or being sick. You can't just buy fish from the grocery store and make sushi. This has to be sashimi grade fish. If you have a high population of Japanese (like California) and you live on in a coastal state then it's probably safe but if you're living more inland, don't bother unless you know that restaurant and chef's reputation is high and the prices reflect that. Even then, inquire about the fish that they purchase.
