When you get curry leaves just freeze them. Remove from the stem and freeze. Remove them few seconds before you use. Otherwise they turn black. Wash coriander and blot dry. Chop fine along with the stems and freeze. Same logic for using as currypatta. Just compress and then put in boxes . I do it all the time because here in Canada you get such big quantity at a time that it goes waste otherwise . You can freeze indefinitely if you don’t keep them out of the freezer for more than a minute
I noticed that your glass kettle is scaled a lot. I had this same problem last week and I used white distilled vinegar and brewed for a while the kettle came out descaled and fresh as new. Just sharing.

You don't follow others recipe, but still I want to tell you that, don't put rice , moong and besan is enough. But while grinding moong add curry leaves and ginger(must). You will like it. Just try once.

Aap kabhi bhi fermented dosa batter nahi banate kya..? Is it because UK's weather is very cold n fermentation doesn't happen properly so you avoid it...
