Here's a simple recipe for curry leaves chutney:
Ingredients:
1 cup fresh curry leaves
1 small onion, finely chopped
2 cloves garlic, minced
1/2 teaspoon grated ginger
1 tablespoon lemon juice
1 tablespoon honey
1/4 teaspoon cayenne pepper (optional)
Salt, to taste
1/4 cup water
Instructions:
1. In a blender or food processor, combine curry leaves, onion, garlic, ginger, lemon juice, honey, cayenne pepper (if using), and salt.
2. Blend until smooth, adding water as needed to achieve desired consistency.
3. Taste and adjust seasoning.
4. Store in an airtight container in the refrigerator for up to 1 week.
Usage:
Use as a condiment with Indian dishes like idlis, dosas, vadas, and rice bowls.
Serve as a dip for snacks or vegetables.
Mix with yogurt or sour cream for a tasty sauce.
