# Indonesian Style Chicken Skewer | Frozen & Fried Chicken Sempol
Ingredient
The Main Ingredient
* 500 grams Chicken Fillets Makes 200 Sempol Skewers
The ‘Ingredient A’ for Chicken Sempol Dough
* 500 grams chicken Fillets.
* 750 grams or about 50 tablespoons of Sago flour (Can be replaced with wheat flour).
* 1 teaspoon of garlic powder or about 5 cloves of mashed garlic.
* 1 tablespoon fried garlic.
* 2 tablespoons fried shallots.
* 1 egg.
* 2 packs of Royco instant chicken broth powder, or about 2 teaspoons Broth powder.
* 1 teaspoon salt.
* Around 250-270 grams small crushed ice cubes or ice water, don’t be too much or the result will be too soft.
* 2 tablespoons of sesame oil, optional.
The ‘Ingredient B’
* 25 pieces of sausages, cut into 8 parts each.
* 120 skewers.
* 500 grams or about 33 ½ tapioca flour.
* ½ kg of carrots, grated or finely chopped.
* 2 Scallions + 2 sticks of celery.
* 2 teaspoons Ground pepper.
* 2 teaspoons Fine salt.
* 1 teaspoon broth. (It’s should be added after the pepper powder, but it’s accidentally skipped out in the video, Sorry)
* 1 teaspoon Nutmeg powder, optional.
Ingredient for its dipping
* 5 whole eggs + 100 ml or about ¼ cup of Water

Note
For the use of Sausages, if you like, you can also chop them until soft and then mixed like meat. I tried it then the texture of Sempol became more well blended and more volumizing.
For the use of eggs too, if you like, you can add 1 to 2 more eggs without changing the dose of other ingredients except for the salt and the broth, they need to be re-adjusted.
The Sempol dough texture is smooth and not too sticky and easily shaped.
So if the dough is too soft, you should add more Sago flour or tapioca flour, so that the dough is easy to be shaped.
And if the dough is too hard, please add a little more ice water. The point is we can adjust the dose of ingredients, as needed.
If you like, you can also add 1 teaspoon baking powder per recipe for a fatter Sempol Chicken.
Then for the frying technique, as to get a better result, it should be fried first about 1 minute, then dipped into a beaten egg.
This way, even if it's dipped just once, the result can be stringy enough.
We can also add 2 tablespoons of wheat flour to the egg beater dipping for a stingier wrapper.
