Just a quick reminder from your friends with celiac disease (like me). If inherently gluten free grains are packed, processed or milled in the same facility as wheat,barley or rye products they are not gluten free. This won’t matter for some folks who follow a gf diet but for someone with celiac disease it can be disastrous. Check your supplier to ensure what else they process before you buy. Yes, that is so true! It REALLY frustrates me when they say they are "gluten free" when they are process in the same place as the offending foods. That is NOT gluten free!

Smash up cooked Pintos, add chopped cooked onion, and whatever you like....add a little Gluten Free flour.....form into patties and fry lime a burger!! They’re a great sandwich or patty with baked potato! Easy and pure protein yummy-ness!

We use a lot of Masa Harina in various recipes, including breads. Masa flour is very inexpensive and is healthy (unlike many gluten free flours). Tortillas, gorditas, tamales, pupusas, empanadas and many other Latin American dishes with unlimited twists and western adaptations. We've nearly replaced all of our white flour with Masa.

Amaranth, lentils, and Basmati rice can be found at Baiz Market in AZ. A lot of their items are much lower in prices than grocery stores. They also have Safflower for a very good price and a huge variety of spices.

My kid is a celiac. Buckwheat groats are an excellent replacement for barley in soup. Rice flour is hard. Let batters sit for a bit before baking to allow the flour to hydrate a bit. Helps eliminate that gritty feeling. Gluten free pasta is expensive. Gnocchi is easy to make and cost effective

I don't have a grain mill, but I do want to get one. I've used/use all the above for gf cooking and baking. I have used a coffee grinder/my ninja/ magic bullet/personal blender to grind rice flour/oat flour/egg shell powder/flax seed powder/mustard seed powder, and coffee beans! I've permanently stained some of these items white from grinding rice, which is why I'm now interested in getting an actual grain mill. 🤣🤣🤣 Great video Hope! Thank you for all your videos!!! I love buckwheat. I don't tolerate oats so I used buckwheat flakes to make hot cereal and in place of rolled oats. I also use the groats instead of barley in mushroom 'barley' soup and used the flour to make pancakes and other things.
Red Lentil pasta is great ( choose the thicker noodles as opposed to spaghetti) and cook 1 minute less than the suggested time . This was the only way I could give up wheat pasta and not feel cheated!
We use a wide range of grains and legumes. I am gluten free, but my husband can have gluten. I love Buckwheat and use it frequently. Buckwheat pancakes are delicious. I made up a good gluten free baking mix that works well for us with no gums in it. Tapioca starch, guar gum and xanthum gum are not my friends.🙂
I use a blend of gluten free grains to make loaves of bread in my machine. There are many recipes on RU-vid. The other thing is the carbs for us diabetics. I am also allergic to eggs and most keto recipes use a lot of eggs. I use flax and chia seeds mostly. Prayers for you both.
Quinoa is a staple in Peruvian cooking. I ate it when it was cheaper than rice, but my then-roommate didn't like the taste. It's related to amaranth, which I've never eaten.
hope,you can add chicory to coffee to stretch it,or ,from what I hear,dandelion greens. catnip tea is supposedly kinda like echinacea. maybe this can be a series of how to stockpile frugally with different dietary restrictions. a friend of mine's uncle had bad exema,and psoriasis he got a kiddie pool,several gallon jugs of Elmer's school glue,and soaked in the glue.once dry,peeled off the glue.showered,exfoliated ,no more skin issues. that was after exhausting every option possible over many years. yes,I saw the lentil burger video.
Rochelle Thundercloud; My grandmother passed on her knowledge of dandelion greens to eat as a salad,the root was roasted then ground for a coffee substitute. I have read that a person can pick the flowers and put them in vodka for a tincture of some kind. So yes,dandelion plants have many medicinal uses besides being an obnoxious weed that certain ones have to gouge out of their yards!🏵
I love buckwheat! It always scares me every time because my gluten allergy is pretty severe. I Google it every time I eat it to make sure that it is not actually gluten.
I use my dedicated spice/coffee grinder to grind dehydrated tomato skins and seeds into a powder after I canned all my tomatoes. I didn't want to waste all that tomato goodness. It worked really well. Now, I use the powder instead of a bit of tomato paste in recipes.
we now eat a diabetic,65%plant based diet. limited red meat,meat as a flavoring,not the whole meal. I had to drastically change my diet about 4years ago ,when I had my gallbladder removed. I cannot eat any greasy foods.
If someone is Celiac, they can't have any food contaminating theirs. For instance, if I breath in wheat flour dust I can get sick or I can get contaminated with wheat crumbs on the table. We have to have the whole house gf to keep chances of contamination down. You covered the different grains well. I don't recall if you mentioned teff.
Any advice for those with serious fatigue due to illness who don’t have the energy to do all this cooking from scratch, and don’t have support people to help?
There are so many things you can still eat glutenfree as a family, like nuts🌰🥜 as a protein on the side as, a snack or incorporated in a meal (ground or not) . I use dried coconut to bake, cook or make porridge it's very versatile. potatoes 🥔mash /(plain or with veggies mixed in🥬🥦🥕🍄🧅🧄) /boiled/ baked/ fried. Rice🍚 boiled/ stirfry or rice noudles🍜 (soup🥣) are basics in our house as home-baked 🍞brow riceflour bread. Veggies are glutenfree also canned versions, (dried) canned 🍇🍎fruits (dried) tofu, lentils and beans (sorry) cheese /eggs /meat /(tinned) fish. Spice your meals up with different homegrown herbs or dried spices so it's never the same boring meal over and over. Or serve it cold the next day as leftover lunch or dinner with some " milk" on grains and rice/ oil "mayo/yoghurt" mixed in with potatoes, rice, . Make hash browns for breakfast with baked beans.... Or rice porridge / rice pancakes with sugar or savory with onions or herbs. Or left over beans mashed ore one of Hopes great beansburgers without a bun! Put some sesame seeds on top for crunch.
Gosh, it's been a while since I've had to make it. So, I don't remember. After 2 years or so Larry's skin was healed enough that he could slowly reintroduce gluten to his diet.
Can a person buy oupes products on eBay? We're starting to have power outages in west central Minnesota. Nothing too bad yet. What bothers me is I use a bipap machine, brother uses a cpap machine.

Can a person vacuum seal their own milled grains and not need to place it back in the freezer? I need room in my freezer for on coming fruit harvest up and coming,I have grains stored in my freezer right now,i have shelf space.
Milled grains lose their nutritional value - especially if left at room temperature. You can keep them in the fridge for a few weeks just fine. Otherwise, I would just mill as much as you need at one time.
I am gluten-free because I have celiac disorder so no choice. I cannot eat oats either because the oat protein is 1 allele from the wheat protein and my system reacts the same.
I'm gluten and dairy free and hubby is peanut free, all due to allergies, and do not have a problem with my grocery bill. How? I buy ingredients, not prepackaged foods. I can't handle oats. In Australia oats are measured different from America, regarding gluten and gluten free. The number here in Australia is 1/4 of in the States. I've been using quinoa flakes for many years as a substitute for oats when making cookies, with our favourite being orange, ginger and quinoa cookies.
Great question. Our 3rd born son probably is the closest to being vegan and I imagine he will continue to be so. He loves to cook and since I taught him to cook, he has no idea what to do with a slab of meat. So, when he cooks for himself, it's always vegan. Our 2nd son's girlfriend is vegan. So, I imagine that there are a lot more vegan meals in his future, as well.

You really need only a few staples to be gluten-free mostly it’s just eating clean so you’re eating no processed crap no bread just meat some carbs and veggies you just make sure your carbs are gluten-free and whatever you’re cooking with has no flour in it
I agree. It was complicated to make and really didn't taste the same. I decided it was worth shelling out the money to buy it from the store if I really wanted it.
I have to be gluten free. Unless I have certified gluten free oats, I can't have them. I do eat a lot of quinoa. I eat quinoa for breakfast with fruit and like a Peruvian quinoa stew that is very good. I have some buckwheat flour that I make into pancakes. I have never cooked with unprocessed buckwheat.
