Cake looks yummy. Will look for book at Costco today. Years ago I made an Italian Polenta Cake. Don’t recall much except the name and that it was delicious. Loved the texture. It did have olive oil as an ingredient which in those days I used. And lastly Chef AJ, I made your corn muffins yesterday. So so good! Easy too as I recently treated myself to a silicon muffin tin. (Silly to still call it a tin?!)

Forgive me if I missed the discussion early on, I tuned in late. I was ready to take the plunge and buy the kindle but I’m not completely clear if all recipes are (added) oil free? Also, I suppose the boiling of the oranges is necessary but it seems a bit counterintuitive and yet it’s baked anyway so I’m actually excited to try it! Lovely episode, lovely, kind ladies! Thank you!
