I'm from South India my self..It's a very traditionally prepared Mutton B/R . 95% nobody cooks it like that but yeah b/r and pulav(also another rice dish) u can find them all over India from east to west and north to south .(all have different process of making which taste different with variety of spice and condiments .

Initially the people running the Village Cooking Channel had to shout due to poor mic quality but I guess the shouting was kind of charming to most of their viewers so it just became a part of the channel

Lefthanded Indian here, and I *did* announce loudly, at a family wedding, that I wiped myself with my right hand when elderly relatives were looking shocked at how I ate. I was 4, there was chaos, it was great. (And I think a couple of other people already said this, but usually if Indians say mutton we mean goat.)

Fun fact: refrigeration has been around since the 4th century BC. Early Persians would dig into the ground and store ice brought from the mountains during winter and would last throughout the summer. The storage units were called "yakhchal" and were one of the major exports Persia had with both the Roman Republic and Carthage.

As far as I know, in Indian cooking, mutton typically refers to goat.

Yeah, it is regional as to which animal it refers to. I grew up with mutton being a goat, it wasn't until moving to the USA that I heard it used to refer to sheep

In some parts of Asia mutton is goat meat, but most just refer to it as simply goat meat.

Heyyo. From the language they are speaking, it's from the south of India - the state of Tamil Nadu. I am from there myself but the style of cooking varies from each village, household etc. But, I just learnt something new about my hometown😂! I haven't seen much of village cooking, so thanks a lot for reacting and sharing ❤

7:45 Mint usually helps in lowering spice levels and helps in digestion. This is why it is used in most of Indian spicy particularly meat foods

The Village Cooking Channel is headquartered in the state of Tamil Nadu, one of the southernmost parts of India. The Tamil have their own language and cultures, especially when it comes to food. That act of serving a big communal meal on banana leaves is done for festive occasions, and the act of cooking for a whole village being left to specifically chosen workers is also associated with them. Something to note though is that biryani is more associated with northern India, Pakistan, and the cuisine of Islamic regions than it is with the Tamils of southern India and Sri Lanka. The term biryani comes from ancient Persian and literally means cooked rice. One fun note I should add, the Tamil language is the source of several words that are now used worldwide. My favorite example? The word curry is derived from the Tamil word for sauce: kari.

There is no such thing as 'curry' in Indian households. It was marketing term invented for Brits around a hundred years ago, who couldn't handle the hundred different names for the different dishes and styles. There is a 'kari patta' or 'kari leaf' very commonly added to food in South India, but it is added to rice, to sambhar, to breakfast food, and has nothing to do with curry as westerners understand the term. The rest of the comment re biryani being more north Indian and Pakistani is correct.

For the fact in india we dont store our meats everything is brought the same day and cooked the same day esp from where they come from. So no need to worry abt it. And theyre from the southern part of india in a state called Tamilnadu. Yknow the place where the term curry originates from. And yeah hes right about thise pots those are usually passed down generations. We have pots as big as to hold 250 khs

I went to check out their channel after you mentioned how big this video was, to see what the highest view count video is, and it's literally just them making watermelon juice, and it has 253 million views! And they have dozens of videos with tens or hundreds of millions of views like this! That's actually nuts, idk how i've never heard of them until you guys and Uncle Roger reacted to them.

The video was taken in Tamilnadu which is a south Indian state. Tamilnadu is a state which is famous for its village agriculture. So the items are like home made as far as I know because it's a village

There is a misconception that biriyani is only made with long-grain rice, it's not true because most of the southern style biriyani (Thalapakatti Biryani, Thalassery Biryani, Malabar Biryani, and Ambur Biryani, etc.) is made with short-grain rice for, example jeerakasala rice, it has more fragrance.

@@ChefBrianTsao Frozen meat is a thing mostly in the metros in India. Tier 2 or 3 cities and villages get freshly slaughtered and butchered meat. It might be a holdover from refrigeration being relatively new to the country (or the class), but most people I know here will either go buy freshly butchered protein, or they'll buy a chicken and do the deed themselves.

@@recyclebin in the cities there are more people than livestock, so those had to come a long way, and the best way is to ship them frozen. In the villages it's the opposite, so why compromise on freshness when you have easy access to live animals?

I already stated in a previous video abt the fact that worldwide mutton is older sheep and goat is called chevon worldwide, in India goat is called mutton because when early britishers first arrived they had a lot of dietary restrictions on meat as they were new, if they ate beef it would anger hindu traders and of they ate pork it would anger muslim traders, so the limited options were fowl(which indians didnt eat even tho all chickens originated from india ,but british popularized eating it) and goat, but at that time the english church banned eating of goat as it was considered the devil's animal and they preferred ppl eat sheep as it was lords animal. Due to lack of sheep meat the Britishers named goat meat mutton to trick the church, and thats why goats name stayed on as mutton in India instead of chevon.

Love some of these village cooking channels, had a chance to see an interview with someone who runs one and give some behind the scenes info. They just donate most of the food to orphanages, or give out the food to the needy themselves. Love their energy, love their cooking and most definitely love their message. In the subcontinental area, mutton usually refers to goat.

Tamil Nadu !!!!! South of India. As a Tamilian this is sooooo soooo the way they cook at the village side. There are many many types of village cooking. This is among the most true cooking channels we see. The statement made at the end was “ half cooking baath biriyani, seasoning a goat , cooking the goat with the rice cooked along inside it , emptying the goat of the rice and having the ripped up goat and curry along with the rice makes it as good as any biriyani that you would eat at a mass prepared wedding hall or function hall and we enjoyed so much we all ate the whole thing” The last thing said Frenchie mispronounced..... He said "Pacha Taneer" meaning - water......... The other stuff was well done. Good job with the repetition Frenchie !!!

When I was younger in school, one of the old ladies who worked in the kitchen used to make a homemade mutton pie, served with mash and gravy. Never had mutton since, I didn't even know what mutton was at the time 😅 but it was one of the nicest things I've ever had

They are feeding the elders for long time , so you know the food is prepared clean , because the orphanage management will not allow them further if any reported incidents for food poisoning or any other thing

Using clean hands is *vastly* more environmentally responsible than 1-use plastic gloves full of dust and chemicals which are thrown away and choke our rivers and oceans and come back to us as microplastics in *everything*. It is absolutely criminal to use plastic 1-use gloves. And if you're reusing them - hell, just wash your hands.

These guys are from the southern part of India, in the state of Tamil Nadu. They do a frick ton of videos just like this and if i can remember around 4-5 videos have more than a hundred million views and a lot more than just traditional cooking. They are worthwhile to watch and these things are so mouth watering, after even i had my biryani, i still feel hungry. Chicken, Fish, Veggies, Cakes and a lot more these guys can do. i would recommend y'all watch more of their cooking as it is a spectacle to see them do it for the greater good. Mutton is weird in that it starts to refer to a different animal (the goat) as you start to go east. In South and Southeast Asia in particular, mutton is goat.

Tamil Nadu is the southern most state at the southern tip of India. It has a very long and well preserved history. The language is thousands of years old, its influence can be found in many modern languages from India to even European countries. These guys are amazing and do wonders for my faith in humantiy

When I went to India to visit my wife’s family I got some questions because I’m a left handed food eater. My right hand is crap for dexterity to eat with. And I believe this channel Is from Tamil Nadu, where my wife’s family is from in southern India. It’s an amazing country and the food is amazing.

Excuse me, I've been smoking the Devil's lettuce, but I would love to see you react to move videos where the cooking style isn't something you're familiar with or used to. While it did sound like the environment where the cooking was happening made you uncomfortable (I could be wrong), it also sounded like you learned something, and that's why I watch. While you're learning, I'm learning too, and your "stamp of approval" educates me on what I should and shouldn't be doing when I cook. I appreciate your videos, and the comedy you both add is the MSG on top!

16:21 If you're lefty and you are an Indian, you can absolutely eat with your left hand. You can clean your butt with either of the hands in that case, because we Indians do wash our hands a loooooot with soap. So both of our hands become pretty clean before we eat

16:24 It's misconception even amongst Indian why we don't use left hand. It's not because we wipe using left hand. 1. One hand should be free while eating so we can touch and hold things other than food. 2. Most people are righty that's why they use right hand. 3. Our left hand is also clean after washing with soap or hand wash. For some dishes we may use both hands. 4. We use both hand while cooking. So we are touching food with are left hand also.

This is from south of India, I believe Andhra Style. but, in India not only biryani but all other dishes might change according to different states. You need to visit and try them one by one to understand the difference and trust me the experience will always be amazing in one or the other way Brian

They live in Chinna Veeramangalam, Pudukkottai, Tamil Nadu. Tamil nadu is the southernmost part of india a bit to the east. The elderly man is struggling with health issues so I hope that he feels better soon.

If you guys feel like watching some other "village style" cooking from around the world, I recommend a channel called "De mi rancho a tu cocina" (From my ranch to your kitchen), about a Mexican granny making traditional ranch style (country style) Mexican food in an old style kitchen. I think her daughter helped her set up the channel during pandemic, the channel went viral and grew a lot since then.

I love biryani and I got so hungry watching this on James' channel. I could only imagine the smell of all the spices especially after they open the pot.

Well mint is used in spicy dishes to calm the spice and add it's taste because in India we use lot of spices to calm that heat lil bit down while balancing flavours we use Cilantro/Coriander and mint as combine to enhance and maintain balance of food I myself am chef in India running my dad's Catering business

In Indian English, Mutton refers to Goat meat, specifically adult or near-adult goat meat. Fancy establishments like to call it "Lamb", but that's because it's Kid meat, or Spring Goat, if you will.

In southern part of India mutton is goat. And most of us do not buy goat that is more that 15kg. So a goat can go Upto 25 to 30kg in weight based on the age. So the older the mutton the more gamey it tastes and harder when it is cooked..

Mutton is usually referred to older goats and I think these people are from Southern India not sure which state though. Also most indian homemade dishes don't have "char" on them except maybe like 3 or 4 dishes in like 200 or so.

being they are from INDIA they are NOT making "BANK", RU-vid pays out well to Americans because the companies here pay high rates for ads, which means content creators get paid well. In India ad revenue is next to nothing, despite it having a massive viewer count from America. RU-vid just keeps that money for themselves. Same thing happens to Canadians and Brits. Ask Uncle Roger how much more he is making since coming to America.

Apart from the stuffed goat, this does remind me of when we would visit family in Melaka. My mom's cousins would throw a feast, and they would prep and cook everything outside over a wood fire. Just for the biryani though, everything else is in the kitchen.

Great video. These dudes rock. Another interesting channel for village type cooking is Wilderness Cooking. It's about an Azerbaijan chef who cooks whole animals and big, big portions. You guys would dig it.

@ChefBrianTsao Facts: 1) That is Tamil Nadu. It is south India. They all speak Tamil in the video too. 2) They make all kinds of dishes not just South Indian dishes. Though they do make a lot of South Indian dishes. 3) They shout becuase initially they didn't such a good setup with high quality microphones and then somehow it became a thing. 4) Videos you should react to from that channel are, Kerala Parotta making video in which the technique is amazing and the Veggie Sambar video.

Wilderness Cooking does the same. He makes gargantuan portions of food, but then feeds a bunch of kids from his village in the mountains of Azerbaijan. The only thing I'm not sure about is whether the kids are from an orphanage or not, but still, videos are incredible. Especially the ones he creates the oven he'll use to cook or a spit or sth. He built a tandoor oven for one video. Make sure to react to sth of his.
