You will have to re-calibrate your speedometer and engine mapping to give you accurate reading on topspeed after such drastic changes. there will be a minimum error of 18-25 kmph post getting a tire so wide.
Beyond 160 is just utterly useless. Lots of rolling resistance, more strain to your engine, chain, and sprockets. Also the way those guys installing your new tire to your rim is just cringy. RIP rims

Tires are the most important components after engine and suspension. People need to be sensible and do a thorough research increasing the size like that. You need to change your front tire too, to properly stabilize the bike else high speed cornering may turn nasty. I hope you consider the advice of a rider who have been on an R3 for the last 6 years.
