Regular flushing can prolong the life of your membrane. To flush the membrane, water must quickly flow through the membrane housing. This is achieved by removing the flow restrictor on your RO unit. Instead of removing the flow restrictor each time you want to flush the membrane, we've created a simple by-pass with an on/off valve.

Couldn't you just remove the flow restrictor and use a hose instead? Then once done flushing, install the flow restrictor?

Yes, that would work too. The reason people use a flush valve assembly is for convenience. If you flush your membrane for 30-45 seconds prior to every use, you can significantly increase the life of the membrane.
