Khaman Recipe
Khaman is a soft, fluffy, and savory snack made from gram flour (besan), popular in Gujarati cuisine. It’s a steamed dish with a light, spongy texture and is seasoned with a blend of mustard seeds, curry leaves, green chilies, and garnished with fresh coriander, grated coconut, and a sprinkle of lemon juice for a burst of tanginess.
Ingredients:
*For Khaman Batter:*
1 tbsp semolina (optional, for added texture)
1 tsp ginger-green chili paste
1 tbsp lemon juice or citric acid
1 tsp sugar
1 tsp eno fruit salt or baking soda
Salt to taste
1 cup water
*For Tempering:*
1 tbsp oil
1 tsp mustard seeds
8-10 curry leaves
2-3 green chilies, slit
1 tbsp sugar (optional, for a sweeter taste)
1/4 cup water
1 tbsp lemon juice
*For Garnish:*
Fresh coriander leaves, finely chopped
Instructions:
1. *Prepare the Batter:*
In a bowl, mix gram flour, semolina, ginger-chili paste, lemon juice, turmeric powder, sugar, and salt.
Slowly add water and whisk to make a smooth, lump-free batter.
Just before steaming, add eno fruit salt or baking soda and mix well. The batter will become frothy.
2. *Steam the Khaman:*
Grease a steaming dish or tray with oil. Pour the batter into the dish.
Steam the batter for about 15-20 minutes on medium heat or until a toothpick comes out clean.
Let it cool for a few minutes, then cut into squares or cubes.
3. *Tempering:*
Heat oil in a pan, add mustard seeds. When they splutter, add curry leaves, green chilies, and sesame seeds.
Add water, sugar (if using), and lemon juice. Simmer for a minute and pour the tempering evenly over the steamed Khaman.
4. *Garnish and Serve:*
Garnish with freshly chopped coriander, grated coconut, and sev.
Serve warm with green chutney or tamarind chutney.
