Ingredients:
1 cup Curd
1 cup Semolina (Sooji)
1 tbsp Poha
1 tsp Powdered Sugar (optional)
1/4 cup Water
Salt to taste
1 tsp Eno/Cooking Soda
Method:
1. Blend the Base : In a mixer grinder, combine curd and semolina. Rinse poha in a small sieve under water, then add it to the grinder.
2. Mix and Grind : Add powdered sugar (if using), water, and salt. Grind everything into a semi-thin, fine batter. Transfer the batter to a large bowl.
3. Activate the Batter : Stir in eno and mix well.
4. Heat the Tawa : Place a tawa over high flame until it’s moderately hot.
5. Cook the Dosa : Pour about 1.5 ladles of batter onto the tawa and let it spread naturally. Add a little ghee or oil around the edges to roast. Cook on high flame until bubbles form, then lower the flame slightly until the dosa sets on the surface.
6. Serve : Once cooked, remove the dosa with a spatula.
