I would like to make this but i want to know if this can be made without baking soda / fruit salt? If yes, then how? Also, can lightly roasted rava be used for it? Just one more query, fine or granular rava is to be used? Please tell me.
No, it cannot be made without baking soda/fruit salt as it won't be spongy and soft. It's instant idli and hence we are not fermenting for long hours to get sponginess. Hence, baking soda/fruit salt is important.

There can be several reasons for idlis turning hard - 1) Baking soda or fruit salt has lost its potency 2) Batter has been rested for a while after adding fruit salt or baking soda. Add it immediately to the steamer. 3) Excess amount of water used while making the batter - this will result in hard and flat idlis. No worries, you will get nice idlis next time for sure❤
