New Data Extension would be created under the "Interactive Content" folder on the Data Extensions page. Please give more details about what you mean by options to use an existing data extension.
Yes, any one option you can use, there would be few things that you would have to look for when you are using existing DE. For new, you can define attributes as needed (based on what you're capturing in the form) and this new DE would be stored under "Interactive Content" folder as per my previous comment.
