If I could offer a little Professional Culinary experience from Louisiana, Iguana is amazing to eat! It’s Identical to alligator as far as being being extremely lean and most people over cook it and make it dry like leather. Iguanas generally don’t get the same diseases as pork, chicken, and beef, so most people cook them to 165 for Chicken and it gets too dry. Iguanas do not have the same fat content as Chicken. My super simple recommendation is to marinate your iguana meat over night in a plastic bag filled with cheap brand Italian dressing. Slap on a grill to internal temp of 160 degrees. Keep in mind meat from Iguana is SUPER thin so depending on grill temp you are looking at 6 min per side. You can also cook Iguana by simply coating in olive oil and sprinkling with dry ranch dressing. The main thing with cooking Iguana and Alligator which I consider identical, is people cook it too long. Cook either like a medium rare steak and you can’t go wrong!
