Caramel Kheer
Ingredients for Soaked Rice:
Rice 1 cup
Water (for soaking) as required
Ingredients for Caramel Syrup Preparation:
Sugar 400 g
Water 1/4 cup
Ingredients for Caramel Kheer:
Milk 2 liters
Soaked rice
Caramel syrup
Almonds + pistachios 1/2 cup + 1/4 cup
Directions for Soaked Rice Preparation:
In a bowl add rice and water. Mix them well and soak for 30 mins.
Now remove the water from the rice and break the rice with hands into small pieces. Set aside.
Directions for Caramel Syrup Preparation:
In a pan heat sugar and cook until it melts. Now add water and mix it well. Set aside.
Directions for Caramel Kheer Preparation:
In a pot heat milk and add soaked rice. Cook for 15-20 mins.
Now add caramel syrup gradually and mix it well. Cook until kheer thickens and fully done.
In a separate preheated pan add almonds and pistachios. Roast them for 1-2 mins.
Add these roasted nuts into the kheer and mix it well.
Now dish it out and garnish it with almonds and pistachios.
Your Caramel Kheer is ready.
