Marcus didn't go to Scotland. That was Copenhagen in Denmark which is where restaurant noma is. At one point the greatest restaurant in the world and where Carmen used to work. Copenhagen is also the home of Hart bakery which was opened in partnership by Richard Hart (Marcus' idol) and the head chef of noma. Danish pastry is world famous. It's a culinary capital and I think that episode was a homage to it. The drunken bicyclist scene was probably referencing danish culture: drinking, bicycling and solidarity.

Yes and No, Carmy is dealing with of internal and external problems/issues and people around sometimes enhance those issues and problems, without being understanding. Like Sydney for example, she’s low-key kind of a bitch and she was hating on Carmy and Claire’s relationship. Carmy is putting the effort and trying to better the restaurant and himself, but when you have mentality “of waiting for the another shoe to dropped, because there is always another shoe.” You might get in your own way at times.

Sydney wasn’t hating on Carmy & Claire’s relationship. At all. In fact, she was the one who told him that he needed to figure out whether or not Claire is even his girlfriend. Carmy skipped out on helping Sydney with figuring out the menu & was pretty absent during everything going on with the restaurant, so much so that finalizing of certain things in the restaurant, including the infamous fridge door, was not taken care of. Sydney had every right to be upset with Carmy, as she was.
