Thank you for another great and informative video Larry. Not sure if I'm ready to go out and buy one myself but that looks like it came out great. I am convinced the foil boat method is the only way to go since I've had so much success with it I'm afraid to try anything else now. On the subject of pellets, I've gone as far as using a pellet smoke tube for cold smoking cheese and cold smoking salmon and other fish with great results. All the best, cheers!
The foil boat method is great. No question about it. You have a WSM, don’t think you need a pellet grill. BUT, if you decide you want a pellet grill I’d definitely give the Z Grills a look. Affordable and does the job right. I have friends who cold smoke bacon with pellets on their Weber. I may need to try that soon. Cheers!!
When are you going to check out Lumberjack or Bear Mountain pellets? Zgrills is also what I picked up 2 years ago. The other thing I picked up is a Meat Swadl. Does a great job of holding.

Great looking brisket, too bad I’m not close enough to help with the sampling lol. I’m a fan of B&B and Treager pellets. My last brisket was an 18 pounder that was super aggressive on the trimming. Followed the Meat Church Mexican Brisket recipe, we are big fans of brisket tacos. I think you’ve got it figured out, have a great weekend. Cheers.
Thank you! The Z Grill doesn’t have a super smoke feature. But in the cooks I’ve done I haven’t really needed it. That being said it was a more mild smoke. Hope that helps.
