I think RDJ should play the role of Doom with few reasons: 1. we all know MCU will most likely wrap the multiverse saga soon so RDJ will play just for 3-4 years and that's it 2. Doom is himself a complicated character different from Iron man so that's how RDJ got convinced from MCU.

RDJ has done the best iron man. we value that story. Now because MCU is struggling financially, they are trying to milk fandom. It's not like they value craft and story. no good storyteller would suggest RDJ to play this character as the same face holds a great value for another character in the story.
