Is the Timemore Sculptor 078s overhyped?

Ever since its launch date on Kickstart the Timemore Sculptor has been one of the most hyped coffee grinders on the market. RU-vidrs loved the prototypes or early models (I didn't get one probably because my channel had under 10k subs at the time) and all the critics reviews were positive and on the surface it looked like an great deal.
An early bird special of $499USD for a 78mm vertical flat burr grinder was incredible compared to the $3000USD EK43 which would be too massive for any home kitchen. Even the EK43s, a more reasonably sized grinder, makes you pay the same amount for the privilege.
They also managed to get two extra features in there that everyone was keen to trial: Variable RPM and a unique "Fines Knocker". These two features weren't available on many machines - especially at this price point - so I think it just hit the market perfectly and Timemore went down with one of the most historic Kickstarter campaigns!
I've been excited to finally share my thoughts with you about this grinder and whether it really is as good as it's made out to be.

I did a blind taste test against the Ode Gen 2 with pour over for my coworkers (who are just normal people and not have discerning palates), and they all universally liked the 078 better. The flavors were clearer and had more depth as a result. On person in particular said she never drinks coffee black and wasn't able to drink the Ode version but was able to drink and enjoy the 078 variant easily. Given that these were the results (with small sample size), I'd say it's worth the purchase

Espresso or filter? I'm guessing filter since I have never been able to convert someone to black coffee from one cup on espresso 🤣

I ordered mine at the end of January and finally received it June 14!!!! I almost canceled my order. I'm glad I didn't. 4 shots later I'm dialed in. Extremely quiet and the knocker feature is quite nice. Relived it arrived. Cheers!

I got the 078 through KS and I've had it for a few months now. I'd sold my Decent machine and have gone to simply pourover and batch brew. This grinder is so fantastic for this. It's amazing you can get a grind quality this incredible at this price point. Go back 10 years and you've got limited options at much higher prices, forget inflation. I'd say for pourover it is perfect, but when I make a full pot for my wife and I, I generally use 60g coffee, and both the hopper and the dosing cup are a smidge too small - Timemore is making a larger hopper that fits on top of the existing, but it is ugly. Looking to aftermarket. Still doesn't quite solve the problem of the catch cup, but for now I can just use a larger cup.

Yeh you'll probably have to slow feed the beans into auger in that case. Grind straight into the filter basket and that way you won't need to worry about a new hopper.

Any recommendations on settings for the 078s for drip and cold brew? Just got the grinder and do mainly drip and some espresso. I use the Breville precision for drip and enjoy being able to play with brew temps and bloom times on a drip machine. Trying to learn how one would go about dialing in grind for drip. Thanks and great video!

I would like to see Timemore offer an optional or accessory hopper of about 80 grams in size. I grind 55-60 grams at once daily. Sometimes a little more.

after 12 kg of seasoning and few months of use, the result is so much better before the first grind and way less retention! I usually purge the rest of the retention with highest RPM

Yeh I am only about 10kg deep having put through 7 initially. But I find it's settled in a lot better now, should just continue to get better. Interesting idea with the high RPM to purge! 🙌

I bought it a 078s super early bird and decided to cancel it after seeing that the range for espresso seem to be super narrow and that the burrs need so much lot of seasoning ... i kinda regret afterward but i ended up finding a ditting kr805 for cheap and put some 80mm ssp mp in and im super happy with it soo 😅

Yeh I was surprised at the limits for the espresso but I haven't had any problems dialling it in. Yeh the seasoning is a pain but every new blade set needs seasoning so I'm used to that. Only difference is that a lot of grinder specialists will do a bunch of seasoning before you receive it, not the case with this one.

Great looking grinder. With so many 64mm burr sets available, it would be hard to choose a grinder with limited burrs.

It says it's limited but honestly to the regular user they will be fine. I'm no q grader but I rely on my palate and these grinders are gold.

Did you find that you needed seasoning? I find mine produces an acrid taste to all coffees not present on my other grinders.

Yes absolutely! It gets better, a lot better, but it takes about 10kgs before it really settles. 🤦

I think this will be the grinder I buy when my Barista Express finally dies. Currently looking at one of these and the Breville Dual Boiler.

Internal Barista Express grinder is bad. Every single coffee youtuber recommend to get a better grinder as soon as you can with this machine. I managed to get my 064S when they just launched the campaign and I'm so happy I could abandon the internal grinder completely. The difference in drink quality is huge. Now I already have the much better grinder than the internal one and aim for the Ascaso Steel Duo to replace my Barista Express by the end of the year.

@vdr00g it's not that the grinder itself is bad it just doesn't have many steps so it's virtually impossible to hone it in on the perfect grind setting. The bad thing is actually the machine itself, it's one of the worst Breville make. But also, I've gone off Ascaso lately as they have lost a few votes on reliability and durability. They are Spanish and not Italian manufacturing and I just think the quality is not up to the same standard for the expense. Watch my videos on what machines to buy in $1-3k or $3-6k range and decide for yourself but there are some amazing machines coming out of Milan which will never let you down. 👌

​@@Rydecoffeecoach Sure, I've seen the video. Your suggestions are awesome, but I don't want a dual boiler machine and don't really care about the group being strictly E61. Dual thermoblock sounds awesome since it's much more energy efficient and overall with its feature set it looks so convenient for home use. Also, even though I live in EU country I can't really buy some of the machines you recommend in local stores. I still have to order those from Italy/Germany which rises some concerns about warranty services if those will be needed. Shipping espresso machines back and forth isn't that fun. On the other hand I can buy and service Ascaso machines at the local distributor. Anyway, thank you for the tip, and I will get back to your video and review my options again when the time comes.

@vdr00g totally respect your reasoning.🙌 I love the look and feel of the Ascaso designs and I used to recommend them until I was overwhelmed with negative comments about the amount of lemons that were still being produced. I remember they had some bad quality issues around the 2000s but thought they had fixed them but then last year I heard of more. I think if you can get a good local buyer that will look after you, go for it. You're absolutely right about the risks of importing from other countries as service is very important. I just purchased a Victoria Arduino Mythos MYG75 and am having major issues with the scales already but at least my supplier is on my side. It's a beautiful machine but I haven't loved it so far. I wish you all the best with your machine and I really do hope that whatever you choose brings you joy every morning for years to come! 🎉🙌

Let me ask you I have a Breville Barista Pro and use a Eureka Mignon Facile Espresso Grinder (which made a huge difference) and have had great results, and for me It has been so much fun trying different coffee beans, my question is do you think it would make much difference going fro the Mignon to a grinder like the Timemore Sculptor or say a DF83V make much difference ? A lot of people say you can't get the Pro Temp very hot but I have found out by running 2 dummy shots with a dual wall basket for 45sec at high temp on second dummy I have gotten the Pro temp up to 96C :)

The Eureka grinders are great already so unless you're drinking your coffee black and you're an experienced coffee taster, you probably won't find a huge difference in taste. It will be more noticeable in filter coffees but again, maybe 2-5% better which most people won't distinguish. You will notice a difference in workflow, the Timemore and df83 are faster and will have less grind retention.

As a pure coffee amateur (with a 078s and a Robot for espresso): I am shocked how much of a difference grinders make, if you have the space it's totally worth it to have some variety on your bar. Also having a grinder per coffee dialed in improves the workflow so much. (This is the secret power of hand grinders, you can have 5 or 6 in your cupboard and no one will ever know.)

@Rydecoffeecoach haha that would have been amazing! Thanks, though. I'm really thinking about just getting one for 700. I'm sending back a df64 gen 2 today. It was awful. It clogged horribly. The burrs were so far out of alignment. I actually think the splindle was out of alignment and spun on a tilt because no amount of shimming helped. The amount of fines was absurd, and the mess was bad.
