Don Angie in New York City's Greenwich Village neighborhood is run by the husband and wife team of Scott Tacinelli and Angie Rito. The restaurant specializes in contemporary versions of the Italian American classic their respective grandmothers cooked for them when they where growing up. Case in point their prime rib for two. Watch this week's episode that includes prime beef, meat glue, and a blow torch.

Another great video. Thanks for bringing in chefs that are not the usual popular, well-known people. One day I want to go and eat the food that these two prepare. Well done: video and food. These videos are filmed and produced like mini-movies. I think you do great work. This kind of video work is not easy.

Great way to ruin a rib roast. Remember, European immigrant cuisine is based on feeding many with little. Trying to make prime rib taste like a meatball is fine at home when you're stretching your pennies. Mildly ridiculous to have for a serious restaurant. Just my opinion.

Captures all the spirit of The Meat Show (presumably your spirit anyway) with similar production values...but just a touch more in depth and aimed at true aficionados. What is the method of cooking wrapped in plastic?
@bonsaitreehouse5534
@bonsaitreehouse5534 4 года назад
You are cooking meat in a bath of water set at a specific temperature. They already seared the outside so they only need to cook it to raise the temperature of the meat internally to a certain level. We know that if the meat reaches a certain temperature in the middle, it is a certain level of being done. For for example, the temperature of medium rare beef is 130 to 135 degrees. So you cook the meat in that water bath at that temperature. By doing that, you greatly reduce the chances of overcooking it. The plastic wrap keeps it from getting waterlogged by the bath water.
@soettun

@@bonsaitreehouse5534 thanks for replying and i know about sous vide and i cook sous vide every week. In this video, they said they cook it sea bath which is similar to sous vide.
