I had to come back to say how delicious this vegan egg salad was. I ate it with blue chips and in a wrap. My daughter who is not vegan also enjoyed it. This is my new go too. 😊

@@thedivinechef definitely, I love potato salad and mac salad. Havent had either (at least good ones) for 20 years. (That's how long I've been vegan) I always look forward to yummy recipes. I'm not the greatest cook.

I’m going to try this with your chickpea tofu, because I can’t tolerate much soy tofu. I’ve always made my vegan egg salad with chickpeas. I might combine the two. Looks great though. 👍🏾

You can add a healthy grind of black pepper, whenever you add tumuric. I really apms up the asorbabily in the tumric into the body :)

I'm trying to eat more plant -based. This filling (maybe left a bit chunky and no mayo added) would be great in a Sabich sandwich. Pita, stuffed with fried eggplant, chopped "hard boiled egg," salad of finely chopped tomato, cucumber and onion with a lemon/oil dressing, tehina and amba (which is mango chutney).

Hello friend! Costco has the tofu for sure at a good price. You can buy some vegan mayo at a health food store like Whole Foods and possibly a local grocery store and the black salt I purchased on Amazon. 🥰🤩🤗
