Isomalt Sail Tutorial - Easy Cake Decoration - Topless Baker

Isomalt sails are one of the trendiest cake decorations and this week I'm showing you just how easy it is to make them! If you're looking for an easy cake decoration, then an isomalt sail is a creative and bright way to decorate any type of cake. You can create dripping isomalt sails or isomalt waves - play around with the colours and see what you come up with.
To make an isomalt sail all you need is about 130-150g of Isomalt and just a touch of gel food colour. Melt the two ingredients in a pan then immediately pout them onto a silicon mat. Spread the isomalt around so that it is thinner and not all pooling in the centre, then place it over a bowl or a bottle and peg it into place. Allow to set for 5m then it will be ready for your cake!

Such a helpful tutorial. May I know how long can this sit on the buttercream. Should I expect some serious condensation if I store it in the fridge and take it out later? Or it has to be made and put on the cake at the very last minute? Appreciate your reply as I live in a very hot and humid climate place. Thank you.

I’m wondering if you’ve ever made isomalt flames for a cake? I need to make a fire and ice cake and I want the flames to have movement to them sort of like this sail.

Hiiii❤️ looks amazing 😍 i just have one question. Isn’t it tacky when you touch it? I live in a very hot and humid country and whenever i try it i always get a firm shape but it is tacky and so glossy.

Thats definitely nice for decorating the cake, but when it has been in the refrigerator for a while it doesn’t look that good anymore.. is there something I can do to prevent it from losing its shine?

Do I have to use a silicone mat? Could I use parchment paper like I do with chocolate sails? I’ve tried twice with my silicone mat and it’s so thick to peel of it’s breaking every sail 😩

I haven’t tried but give it a go. It be slightly harder to mold and it’s too flexible/week compared to a silicon mat

I like it but Powder isomalt really should go hotter than just melting. It needs to go over 150 at least. 180 is better. This will not stay beautiful for long otherwise. If you just take pre melted isomalt cubes. Just melting is fine.

Natasha Otchere he did it the wrong way, isomalt must get to 180 C, 150 C at least so cristalice properly, is not just melt it as he said. If you are doing it, be careful, because it might burn

An you can eat it. But it is not sugar. It's a artificial sugar. It's not very sweet. You can add some flavouring. But never eat to much artificial suger. It will lactate. 🙈

Prince Nicholas Hi! You can turn the Captions on. If you’re using the mobile app, tap on the video as though you’re trying to pause it, then you should see 3 dots on top of one another in the upper right hand corner. Tap on hit and you’ll see the option to turn Captions on. Hope this helps!

O and I know you are the naked baker and all. But melted sugar or isomalt is really hot. You can really get a nasty burn. So Al least wear gloves. There will be enough nakedness left😂😂😂
